Roll out the sugar cookie dough and, using a large star shaped cookie cutter, cut out stars. Bake according to cookie baking directions, generally 5-7 minutes. Allow time to cool.
Melt the chocolate in an aluminum bowl set over a saucepan of gently simmering water, stirring occasionally with a wooden spoon. Place the chopped nuts in a shallow bowl or on a sheet of waxed paper. Holding each cone upside down, dip in the melted chocolate, coating about ½ inch or so, then roll the coated part in the crushed nuts. Place on a sheet of waxed paper or tip side down in a shallow glass, to allow the chocolate time to set.
When ready to assemble, place a sugar cookie on a plate and top with a scoop of ice cream. Then position the chocolate and nut coated cone on top, like an elf’s hat. Decorate the pointed tip of the hat with a cherry or marshmallow. Add chocolate candy pieces and gum drop noses, or whatever the kids choose!
