Petite Pumpkin Patch

Edy's® Limited Edition Pumpkin Fun Flavor Forzen Dairy Dessert
4 tiny pumpkins, about 3 inches in diameter
Ground cinnamon
1/2 cup butter or margarine
2/3 cup sugar
1 egg

Pierce the bottoms of the pumpkins with a knife in three or four places. Microwave on High for six to seven minutes, just until pumpkins are tender when pierced or gently squeezed. Cool.

Slice off tops and scoop out seeds and pumpkin meat, leaving shells intact. Reserve tops.

Use dessert plates and place pumpkin shells in middle of each plate. Place a large scoop of frozen dairy dessert in center of each pumpkin. Pour warm caramel sauce (see caramel sauce recipe below) over frozen dairy dessert and around pumpkin on dessert plate. Dust with cinnamon and arrange pumpkin tops to the side of shells. Serve immediately. Serves four.

Caramel Sauce
In deep, microwaveable bowl, microwave butter until melted (45 to 60 seconds). Stir in sugar and egg. Microwave the butter mixture on 50% power until sugar dissolves and sauce thickens (two to three minutes). Cool slightly, then stir in prepared caramel sauce.
