Slice about 1/2 inch off top of apple. With a melon baller, remove core and enough apple to hold a scoop of ice cream. Do not cut all the way through to bottom. Prick sides with a fork.
Mix cream, apple juice and sugar, and pour into cavity. Place apple in microwave until tender (3-4 minutes). Pour sauce from cavity into baking dish to hold.
Transfer apple to serving dish. Place a scoop of ice cream in cavity, and spoon on sauce from baking dish. Dust lightly with ground nutmeg or cinnamon. Serves 1.
