Warm Berry Bread Pudding with Vanilla Frozen Yogurt
YOU WILL NEED:makes 6 servings.
1 loaf challah
3 Tbs unsalted butter
1/4 cup sugar (for ramekins)
1 cup of heavy cream
1 cup whole milk
1/2 cup sugar plus 2 Tbs for berries
2 whole eggs
2 egg yolks
1 tsp kosher salt
1 tsp vanilla extract
1/4 tsp orange zest
2 14-oz. containers of Häagen-Dazs® vanilla frozen yogurt
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 tbs lemon juice
DIRECTIONS:preheat oven to 350 degrees Fahrenheit.
butter 8 oz. ramekins and coat with 1/4 cup of sugar. set ramekins on a sheet tray.
heat milk and cream in a saucepan, bringing to medium heat. in a separate bowl, add 1/2 cup sugar, eggs, egg yolks, and salt, and whisk. whisk small amounts of the warm cream mixture into the sugar and egg mixture. return to heat and stir until custard thickens. strain, and add orange zest and vanilla extract.
add berries to a bowl, and toss with sugar and lemon juice. distribute into ramekins evenly. cut the challah into 1/2-inch cubes and add to ramekins. pour custard on top of berry and challah mixture. cover with foil and bake for 35 minutes. remove foil and bake for another 20 minutes.
to serve, place ramekins upside down on a plate and lift. garnish with fresh berries and ice cream.
