Every day can feel as romantic as Valentine's Day with this chocolate strawberry truffle dream!
2 Outshine® Strawberry Frozen Fruit Bars
1 cup frozen strawberries
1/2 cup coconut flour
1 cup chocolate chips
1 teaspoon coconut oil
1 tablespoon freeze dried strawberries, chopped
Combine frozen strawberries and Outshine® Strawberry Frozen Fruit Bars in a blender. Blend until a puree is formed.
In a medium bowl, combine the strawberry puree and coconut flour. Mix until a dough is formed, and roll into 1/2 tablespoon size balls, you will need 8. Freeze to set, at least one hour.
After the strawberry balls are set, melt chocolate chips with coconut oil in the microwave.
Using a small silicone cup tray, pour 1 teaspoon of chocolate at the bottom of each cup. Place each strawberry ball onto the chocolate bottom layer.
Spoon in 1 tablespoon of chocolate on top of strawberry filling to cover. Garnish with freeze dried strawberries and freeze to set, at least one hour. Enjoy!
