1 tub of Dreyer’s Spumoni ice cream or Edy's® Spumoni ice cream

1 cup butter, room temperature

1/3 cup brown sugar

1/3 cup granulated sugar

1 teaspoon almond extract (or vanilla extract) 

1 tablespoon maraschino cherry juice

1 egg

1 1/3 cup flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/3 cup maraschino cherries, chopped

1/3 cup pistachios, chopped

1/4 cup mini chocolate chips


Step 1

Preheat the oven to 350F.


Step 2

In a medium bowl, with a hand mixer, standing mixer or wooden spoon, beat the butter, brown sugar, granulated sugar, and vanilla extract together. Add in the egg and beat until combined. Sprinkle in the flour, salt, baking soda and mix just until you no longer see flour.


Step 3

Fold in the cherries, pistachios, and mini chocolate chips.


Step 4

Spray an 8-inch skillet with cooking spray and press in the cookie dough. Bake in the preheated oven for 23-25 minutes.


Step 5

Let the cookie cool slightly, about 30 minutes then top with 6 full scoops of Dreyer’s Spumoni ice cream or Edy's® Spumoni ice cream.
