Using a high-speed blender, blend Raspberry Outshine® Frozen Fruit Bar, pitaya powder, and water until fully combined and liquified.
Pour wet ingredients into a medium size bowl with the pancake batter, stir to combine.
Pour batter in ⅓ cup portions on a non-stick pan over medium heat. Cook for 2-3 minutes on the first side and then flip. Cook the second side for an additional 2-3 minutes, or until fully cooked through.
Serve warm with plain Greek yogurt and raspberries.
